Sweet Soy Sauce(Amakuchi Shoyu)
Japanese sweet soy sauce (known as kecap manis or amazu shoyu) is a thick, dark soy sauce with a distinct sweet flavor. It is made by adding sugar or other sweeteners, such as honey or mirin, to regular soy sauce, and sometimes also includes a hint of vinegar. This creates a syrupy, sweeter version of traditional soy sauce with a rich umami base.
Sweet soy sauce is commonly used in teriyaki sauces, sushi rolls, and as a glaze for grilled meats, especially chicken, beef, and fish. It is also used in tempura dipping sauces or as a topping for dishes like donburi (rice bowls) and udon noodles. Its balance of sweetness and savory depth adds a unique flavor to both traditional and modern Japanese dishes.
